What is the key to a super moist, cheesy, robust lasagna that isn't sour?
Sometimes the marinara/meat sauce is sour, I tried red wine, which helps a bit, but what can give it a more whole, rounded flavor besides the obvious like garlic and onions?
Also does adding more egg to the ricotta mix make it more moist when baked?
I wouldn't use a bechamel sauce in a lasagna unless you want it to effect your tomato sauce and make it creamy.
To offset your "sour" taste, which shouldn't be often, just add a couple spoons of sugar to your large pot of sauce. Sometimes, the tomatoes used to make the sauce weren't fully ripe, so they need a bit of sugar. Adding wine might make the sour worse. Try a T of Aged Balsamic Vinegar -- which is sweet and tangy and adds depth to your sauce.
When I make lasagna, I add a full package of softened cream cheese to my ricotta.
Then, I layer the sweeter tomato sauce, pasta, thick layer of ricotta/cream cheese mixture/ mozzarella and more sauce.
